Ingredients:

  • Milk, for soaking
  • 1 chukar, plucked and gutted
  • 1 medium tart apple, quartered and cored
  • 1 clove garlic, minced
  • olive oil
  • 1 sprig of rosemary, destemmed

Directions:

  1. Soak chukar in milk overnight
  2. Preheat oven to 350°F
  3. Lightly coat bird with oil and sprinkle on garlic and rosemary
  4. Stuff apple inside cavity
  5. Roast for 25-30 minutes or until breast reaches 155°F with internal thermometer
  6. Let rest for 5-10 minutes and serve.
